ingredients
- 1 small onion, minced
- 2 packages (10 oz each) frozen chopped spinach, thawed and drained
- 1 pound feta cheese, rinsed and crumbled
- 3 eggs, beaten
- 1 cup parsley, minced
- 1 pound filo dough
- 1/3 pound clarified butter

directions
- saute onion until soft
- add spinach, continue to saute ten minutes
- remove to bowl, cool, add cheese eggs parsley
- brush baking sheet with butter
- add half of dough, brushing with butter every second sheet
- add filling, repeat with other half of dough
- 350 deg 25 minutes
- cut into triangles, place on rack, serve warm
